Doris Mae’s Mother’s Chili


My chili making days began in earnest about February 2000.  Yep, Y2K did NOT happen.  I had myself one heckuvalot of dried beans.  I plowed through the navy beans making Boston baked beans in my Boston baked bean pot.

Then I went way south and used up my black beans making beans and rice.

And then I had about 500 pounds left of 15 bean mix.  They just stared at me all dry and hard and dared me to begin working through that store house.  I took ‘em on.  And I am here to tell you, eleven year old 15 bean mix is still hard and dry.  As it turns out, we could have fed the entire neighborhood beans for three years with our storehouse!  And they never go bad!  I felt guilty just throwing the lot of them in the trash, so we have been working our way through those beans.

And Doris has saved the day.  On a visit to their house one time, Doris had made the best chili I’d ever tasted using her mom’s secret recipe.  She gave me the recipe and I’ve been making it too ever since.

I will actually be sad when my truck load of 15 bean mix is gone.  Though, right now that bag of beans is still a formidable presence, so I’m not pulling out the Kleenex yet.

Before the weather turns, you might want to make one last cozy winter meal of chili along with Caitlin’s recipe for cornbread.

So, here is the wonderful recipe:

3 lbs hamburger

2 onions

3 cloves garlic

1/4 lb bacon

3 cans kidney beans (Oh No You Don’t!  This is the diversion step to dry 15 bean mix: bring beans to a boil, turn off heat, pour out water, repeat, repeat, repeat, then cook until tender. I heard somewhere that continually bringing to a boil in fresh water somehow makes the beans less, how shall I say it, gas producing.  And it seems to work.  But I digress)

1 large can of tomato juice

2 cans Hunts tomato sauce

to taste add salt, pepper,chili powder, cumin

I serve this with a dollop of sour cream topped with chopped cilantro.

So, when that last cold front slaps you in the face, fight back with this!

  • I just got home from an invitation to Elizabeth’s home for supper, before the BIG snow arrives, and what to my surprised tastebuds did she serve, but the best chili I’ve eaten in a long time, maybe, even ever. Not only did her menu include out of this world chili, but THE best corn bread EVER to touch my hyperactive tastebuds, and I did not even add one drop of salted butter to this savory wonder.[that is saying a whole lot when the butter queen opts for no butter]

    When I asked her if this was a “Martha” recipe she responded that she got this from Terri on Pink Peppers. Somewhere Aunt Doris came up in the conversation and I came home to find all the tasty details right here, printed and centered on your “pink wash” mat. Thank-you Doris and Terri. What joy and encouragement you provide to your followers! One never knows, quite where the ripples will reach, from the pebbles you skip, into the lake.

    ….I’m headed to grocery for a few more beans (I guess I just ignored Y2K….we didn’t even buy a generator) and then over the weekend
    I will be making this too…hmm maybe with Cait’s Pot Bread instead of cornbread. Just realized another perk to the long list of many from Pink Peppers….you get to catch up on family news with me being way down here in Sunshine Land….like Cindy having dinner with Liz. Just love it all!!! And to add to it folks, I got my Chicky Bird Hat order from Taite yesterday….adorable with a capital “A”…can’t wait to gift it!!!

  • This recipe certainly came at the right time! I’m making it too for a moving party on Saturday. Question: What size for the “2 cans Hunt’s tomato sauce?”

  • I use the smallest cans which I think are about 8 oz. I really think the key to the flavor though, is the can of tomato juice.

    Glad you enjoyed the recipe, Cindy! Caitlyn, I think the cans of Hunts tomato sauce are around 14 oz each. I don’t have any at the moment to check with. BTW, I made some of your cornbread! It was delicious! My favorite part of this recipe is all the bacon…I usually double up on it! :)
